Charred chicken and leeks with spiced butter hazelnut drizzle and dill

A winner winner chicken dinner if ever there was one! If you’re into the hands-off leave it in the oven so my house starts smelling nice type dishes - give this a try. It’s super easy, pretty quick, and VERY delicious. While the chicken is crisping in the oven you have plenty of time to cook up any side you’d like with this dish. We served it over sticky sushi rice, which was delicious, but really anything will go here, so go nuts.

My loyal Liddle immersion blender gave up on me last week so the garlic cloves in this recipe are grated with a microplane. If you did invest more than 10 euros in your immersion blender do feel free to use it to make the marinade for the chicken.

  1. Season the chicken legs all over with salt and place them in a bowl or a resealable plastic bag. Add the yoghurt to a bowl together with super finely minced, or ideally grated, garlic cloves, the zest and juice of the lemon, a bit of olive oil, a few grinds of black pepper and some more salt. Pour the yoghurt mix over the chicken legs and let them marinate for at least 30 minutes, up to overnight.

  2. Preheat your oven to 225 degrees Celsius.

  3. Cut your leek lengthwise in quarters and rinse it. Add a little bit of olive oil to a baking dish or an oven safe skillet and arrange the chicken legs skin side up in the dish surrounded by the leek. Add the chicken to the oven for about 40 minutes or until beautifully charred and crispy on top.

  4. Start melting some butter in a small skillet, and add the fennel seeds, chili flakes and chopped hazelnuts together with a few pinches of salt. Fry this together until the butter starts to brown and the fennel is fragrant, about 5 minutes.

  5. When the chicken is cooked through and criiiispy, take it out of the oven, pour the spiced butter over it and garnish everything with a handful of dill. Winner winner.
